Biscuit Making Adventures

Ever since Dave has watched Bobby Flay’s biscuit throwdown he’s been nagging me to make biscuits.  I told him that it’s kind of hard to make flaky, buttery, and fluffy biscuits without butter.  In addition, Flay is a pro!  Whatever he does on t.v. is 10 times harder to do at home.  Despite my warning, Dave found a vegan biscuit recipe online and tried to make biscuits anyways.

Here’s the finished product…

I gotta say that the biscuits tasted much better than they looked.

I can’t say that Dave will ever make biscuits again though.

In addition to our biscuits we also made cous cous and baked asparagus.  The asparagus was amazing.  I have baked asparagus before but this time I drenched it with seasonings and sprayed it with cooking oil before popping it into the oven and it turned out delicious.  You must try this at home!

Yoga Goals

So last night’s impromptu yoga sesh reminded me of my love for it.  My instructor in college was Joanna Spector who teaches both classes at Duke and at her own studio, Hatha House.  I really loved that class because I got to do a lot of neat stuff like inversions and back bends.  With this said, Dave and I looked up the craziest yoga poses.  We google imaged “cool yoga poses” and we found:

I was utterly floored!  I tried to do pose 1 and nearly fell on my face (I didn’t even bother with #2 lol).  Anyways I was looking at yogajournal.com and found this lovely piece on “Eka Pada Rajakapotasana,”one-legged king pigeon pose.  I am totally inspired.

Yoga for me isn’t so much about relaxation as it is connecting with your body.  Many of the poses take total concentration and focus for me to achieve.  It’s kind of far fetched but I really want to be able to do the one-legged pidgeon pose by the end of the year.  I know yoga isn’t supposed to be all about doing crazy poses but that’s part of the fun for me.  I’ll try to post pictures of my progress.

Anyways today I misplaced my camera and couldn’t take any pictures of my food :-( .  I did get a decent workout in at the gym during the Duke vs Baylor game.  I ran about 2 miles than walked on an incline of 5 on speed 4 for about 20 minutes.  I had to stop running during the game because I’d focus on the game and forget to move my legs!  I almost fell off of the treadmill twice!  I made it to the weight room during half time and did some bi’s and tri’s along with the shoulder press machine and back extensions.  I am really feeling it in my arms and shoulders.  I absolutely loathe the shoulder press machine but I guess I’ll have to just work on it some more to get stronger.

So today I’m so happy that I got a decent workout in.  I ran about 3 miles plus walked a quarter mile on the treadmill and did some intense ab work with some push ups afterward.  Anyways I saw the most disturbing thing at the gym today, old man’s privates.

No, I didn’t accidentally walk into the men’s changing room, I was simply laying down doing crunches in the stretching area.  Unfortunately the stretching area happens to be under a staircase, where on top of the staircase an old man was up above using the arm railings to stretch his legs.  He was going commando underneath his floppy gym shorts.  I tried not to look at him but it’s hard not to look up towards the ceiling when you’re down below doing crunches!  I was tempted to take a picture with my cell phone but that may be over-sharing.

My good friend Mary tagged this pic of me on FB today! (Mary is my super smart and sweet friend who got into grad school at UNC!) I was trying clothes on at Sam’s Club and I was being completely ridiculous.   I remember Mary and I shopping for tailgate clothes and portable wine sippie cups.

Anyways today I looked in the back of my freezer and found some shrimp.  Since I no longer eat animal products I made them for Dave, my transitioning vegan boyfriend.  I kind of made up my own recipe for the shrimp.  I first made my own coating mixture of spices, finely chopped oats, and shredded coconut.  I then butterflied the shrimp and dipped them into EVOO to help my coating mixture stick.  I popped them in the oven for about  5-7 minutes and they came out perfectly.  I also made some vegan tofu sushi for both of us, yummy!

I also tried the millet bread that I talked about in my previous entry and it’s delicious!  I had already eaten half the slice before I thought about taking a picture.  It’s definitely going to be a staple in my diet from now on.

Sunday Funday

Currently drinking: Vita Coco- Coconut Water

I absolutely love Sundays.  For most people Sunday is the end of the week, but to me, it’s my reset day.

Sunday to me is relaxing in bed with a nice cup of coffee and catching up on my reading.  Except I’m enjoying a nice glass of coconut water right now.  Coconut water is totally amazing.  It is not only really good for you but is totally refreshing.  Granted, it tastes nothing like what we consider to be “coconut flavor.”  In fact, it actually tastes a bit sour and not very sweet.

Also, I just went to Whole Foods and got some millet bread!!!  I was reading one of my favorite blogs Allie @ Live Laugh Eat and was totally craving it after reading her description.  She describes it as “slightly sweet, very dense, and tastes like pound cake!” I am going to eat it a slice right after I go to the gym!
