Some people get cravings for forbidden foods when they are on diets, I also get cravings. However, my cravings are generally not to eat the “forbidden” foods but to make them. I was craving bread for some reason last night and so I picked up a box of beer bread mix from Trader Joe’s.
Beer bread mix is actually quite versatile, you can substitute any carbonated beverage for beer such as sparkling water, fruit sodas, or your regular old Coca Cola. I used blueberry soda and frozen blueberries.

Here’s the dough in the very well greased pan.
The finished bread!
It smelled soooooooooooo goood!
I would definitely recommend the bread mix to anyone. It was so, so easy! All you do is mix a carbonated beverage into the mix, stir for like a minute, and then bake! I know that making bread can be very complicated but not with this mix!
I served this bread to all of my roommates. Below is a montage of bread porn.
Oh Yeahhhhhh!
For my own dinner, I started off with some yummy lentil soup!
Dave and I then had breakfast for dinner
. He had a whole wheat english muffin with maple syrup, smart balance, and blueberries.
I had some steel cut oats with blueberries mixed in.
Anyways, I’ve been on Phase 2 of the South Beach Diet (SBD) for about a week and I am really enjoying it. I love that I can still have my carbs but also eat more cleanly. I feel a lot more clear headed and not as weighed down. I almost cheated on the SBD when I visited a pastry school yesterday. I will post pictures later. They gave me so many treats to take home and I couldn’t eat any of it
